These maple goat breakfast sausage patties add a little something different to your brunch.
While it sounds intimidating, making your own homemade maple breakfast sausages is pretty easy. This recipe combines ground goat with ground pork to have the right consistency of animal fat for flavor and juiciness. I
The maple sausage is a perfect addition to just about any breakfast: eggs and toast, pancakes, French toast, breakfast sandwiches, or a quiche.

1 tsp. sea salt
¼ ground pork, bacon ends or ground beef
¾ tsp. black pepper
1/8 tsp. coriander
